Soul based attacks
I think the whole killing Demons and soul condemned part, based on the codex entry, just means that killing those demons releases all the souls they have consumed. So the soul fading into nothing could refer to that.

Though bruce being able to kill demons permanently would indeed mean he can harm their spirits in some way. So I'm fine with that reasoning.

The Soul-damage weapon also seems like a good reasoning.

Layered Souls
First of all, I don't think "Layered Souls" is a thing. It would just be resistance to soul destruction for your argument.

Second, I think it's too vague even for that, and may also be treated as a game mechanic. A more reasonable interpretation is:

1. He kills the Demon, and the souls the demon has absorbed are released.
2. The Demon itself also receives soul damage, its physical incarnation dies and his soul pops out.
3. The player absorbs that soul and his soul-count increases.

I think part 3 is especially true since the soul did not disappear until the player got close to it, so it can be interpreted as a lack of animation for a game mechanic that absorb souls of defeated enemies.

Everything else seems fine

Pizza guy is the one killing demons permanantly, the bruce example was brought up to show that the soul in this instance has to have been destroyed or the demon in question would still be alive and just go look for another body

So I take it you agree with soul dmg then?

regarding this is this suppose to be one interpretation connected by 3 parts or 3 different interpretations?
