Okay, so stealth is a thing that Ghost Face has. A zebra may have stealth against its natural predators like lions and such, but a human would definitely see through a zebra's disguise in the savannah, let alone in a random parking lot. I looked into how tough it is to hunt deer with a knife, as an animal less robust than a zebra would serve as a decent reference point as to how well one can take on a deer with a knife.
Looking through Quora posts with people talking about their encounters with deer, obviously ignoring the bots, deer generally need quite a bit of hunting skill to take one out. Those who gave a straight answer to how difficult it is to kill a deer with a knife said the task is pretty tough. A zebra can knock out a cervid (wildebeests are antelopes, which are a type of deer) with its kicks no problem.
Roman's intelligence section went into great detail about his manipulation and deception tactics, but the thing about wild animals is they aren't susceptible to that stuff purely because they're not domesticated like dogs and horses. No prep time means traps are unlikely a thing here, and if they do materialize, they'll likely be rudimentary. I don't think even the typical phone call opener would be plausible without prep time, not that it would matter since a zebra isn't capable of using a phone. Outside of this, the profile details how proficient he is at human assassination, but despite the great feats in murder, that doesn't exactly translate into how good someone is at hunting animals, let alone zebras. It isn't "one size fits all," y'know?
So the lack of game hunting experience combined with the difficulty of killing a less robust animal of a deer would make it more likely that a zebra would win. I don't see it being an easy win for the zebra, though, as I'm sure it'll sustain some bleeding wounds, but still.
