Denji usually eats his opponents, so if deadpool kept regenerating Denji would just keep and devouring him and eventually eat him whole, which would just defeat him considering he only has Mid regeneration listed on his profile. Going with Denji here

Both counted, though I will note that Deadpool can regen his limbs like his legs and his skin pretty quickly. It's also gonna be pretty hard for Denji to pin him down considering his unpredictability and skill.

Ngl now that I've read a bit of Chainsaw Man I don't think Denji eating an opponent is something he would resort to normally. Iirc the only time he ate someone was Makima but he did that to get around her contract and had cooked her beforehand.

No, he was cutting up his brain to resist her mental attacks & mainly because of her regeneration. This is not new to us since we are aware of Denji's masochism and battle high, this is something he would do to deadpool as in the past we know Chainsaw Man has no problem with eating his opponents for an advantage
