Round 1: No prep

Round 2: 1 hour prep for both sides

Round 1: Close, but i'll give it to Mercury via higher speed and active combat analysis.

Round 2: Mercury, easy. It took him less than five minutes to figure out how to beat Pyhrra. An hour should be more than enough time to figure out how to beat Sanji.

Sanji stomps both rounds mercury isn't even in his tier. He wouldn't be able to withstand one of his kicks he blitzes and prep wouldn't do anything Sanji wouldn't need to and Sanji is to fast for him to even try to pull some dirty tricks

This is Sanji in the Arabasta/Skypiea arc they are in the same teir at that time. Both at Multi City Block, and Mercury's actually a bit faster.

Sanji can learn about his opponents faster when he's in Combat such as when he fought the fishmen or Bon Clay so even though he's at a disadvantage it doesn't matter whether or not he has prep or not.

Also if Sanji knew that this guy hit a woman (aka Pyrrha) Mercury is in for a free facial surgery.
