Question about Star Platinum.

Cause Darby would notice the cards changing due to him being an expert in gambling so Jotaro knew meaning he could take the chance as he relied on mind games

Nope, he's a stand user. And stand users themselves are pretty impressive when it comes to reflexes and even strength (see Avdol and Polnareff talking whilst Hol Horse's bullet is travelling towards them, Rohan blocking Crazy Diamonds punch etc)
"why Jotaro not swap cards when he play poker with D'arby?"
No idea to be honest, Star Platinum was able to grab a drink faster than D'arby could percieve the action. So logically it should have done the same whilst switching cards, but for some reason Jotaro still decided bluff.
"If Star Platinum is Massively FTL"
Yeah, if you're saying that Star Platinum is not MFTL due to the cards stuff, you might as well propose Star Platinum isnt even subsonic. Which with many other feats, prove that proposition is not the case at all.
