When it says they can't die, does that mean Regenerationn from anything except dragon sword wounds, or does it mean type 2 immortality (they can be damaged, but only a dragon sword can actually kill them)

Well, in the series Morgana was basically stabbed a dozen times and it did nothing. Merlin survived the contact with some death spirits that kill with one touch. They were wounded, but only for a short time.

Would he be able to survive being crushed into a ball of flesh and organs by SW

Since a sword forged in a dragon's breath is the only weapon that can permanently kill them, I would say that there is a change that they can somehow recover. But I am not sure, since something like that never happend in the show.

But it doesnt matter, since Merlin can avoid that with shields, time hax or by killing her with with a stunning spell
