It has never been explictly stated or shown anywhere that the Nexu destroyed any droids with 1 swipe (as it died before they appear) so if it does try to show me where it has been stated or shown.

The only profile this affects is Padme, and she only received a glancing blow so it is not like she fully scales to the claw anyway.

Yup. She's done things that would put her on the level of ARC troopers and other confirmed 9-B characters. She also has that 9-B durability feat in AOTC with the LAAT/i fall, which would mean that anyone who has gone toe-to-toe with her in hand-to-hand would also scale.

I think reasoning for her being 9-B in AP and durability are enough if we just leave it at the droid fighting feats and the falling out the LAAT/i feat from AOTC. The rest is just unnecessary and unsupported.
