Really old thread, but just incase you were still wondering. Imaishi stated in an interview online that Simon himself is Gurren Lagann, he's the one with the power, not the mecha. Stated here

Gurren Lagann destroyed Super Granzeboma, which was fueled by The Anti-Spiral's full power. This would put Simon equal to The Anti-Spiral at this point. Since The Anti-Spiral rid itself of Spiral Power, which itself was the energy which evolves life forms, Simon eventually evolved beyond The Anti-Spiral. This happening is not plot-induced stupidity, as there are many pieces of evidence, if put together, makes this all make sense
