He can modify either any surface to create a lot of guns to fire at the opponent, or he can use a machine gun that he can turn into a flame thrower via Machina Maker. And that is in base.

Arsenal Suit has cannons, lasers, and a wing-like blade, plus the stat amp.

Overdrive has the stat amp, can do Base Weisz's attacks and abilities but faster and better, and has robotic tentacles on his back that can be used to block attacks.

Weisz gets outskilled and out-stamina'd so hard here. Weisz's weapons are neat, but since Sanji has no technology to speak of whatsoever, he can't use Machina Maker efficiently at all, meaning he has to rely on Arsenal and Overdrive, both of which have a limited amount of time to be used. Sanji outlasts Weisz's best tools and then kicks apart his machines and weapons till Weisz has nothing.
