How does speed work without a body ?

A character exist purely as a disembodied consciousness, they cannot technically move because they lack any form that could perform a mouvement. The only things they can do is perceive the world around them, think and activate their powers. They can only interact with their environment indirectly via summons and other supernatural ability.

What speed should they be given ? Should it something like Immobile or Unknown ?

Since Consciousness is involved, I'd say perception speed.
Since you say they cannot perform movement in the physical sense, that likely puts off any chances of getting a speed type that cover distance (travel, combat, reaction, flight, etc.)
