Well... as the description of the Saitama's AP says:

"After breaking his limiter and going through the process of fully removing it, became strong enough to effortlessly one shot both Light Pull Cord and even 170,000 Year Magicicada Nymph"

Saitama is breaking his limiter at this point. Isn't logic that he should obtain the same abilities as Garou breaking his limiter (Adaptation and maybe power mimicry)?

No. Saitama has never shown to possess those abilities nor is there reason to believe (currently) that he possess those abilities.

At least on Garou's page adaptability is treated as a consequence of breaking his limiter. Saitama at that point was also breaking his limiter, what would make him different?

Their goals were different. Garou wanted to become the perfect monster to bring peace to the world and Saitama wanted to become a hero capable of beating anything in one punch. The differences in goals is why Garou never fully broke his limiter and why Garou has multiple other powers Saitama never showcases.

I will add that if Saitama or the limiter removal get a quote in support of them having the same powers, then it'll be fine to give him those abilities.
