With speed equalized, Katakuri’s observation haki will be a massive help in his offensive and defensive maneuvers: he’ll have an easier time in both opening up his body to phase through attacks and landing precise barrages with his mochi constructs. The sand barriers will be annoying, but Kata has the stamina and attack variety to outlast and deal the killing blow.

This feels like a heavy stomp. At least he gets Katakuri's mochi sandy or something. Gaara has nearly no wincons, AT ALL. Even if he tries to sand Coffin Katakuri, Katakuri either foresees it or awakens to turn Gaara's sand into Mochi and just walk out out of it.

Katakuri wins this. He might have some difficulty dealing with Gaara's sand and its automatic defenses, but Katakuri's mochi is also extremely versatile and allows him to perform various techniques. Not only that, but Katakuri's future sight plays a big role in this, and I think that future sight could allow him to outmaneuver the automatic reaction ability of Gaara's sand. Also, Katakuri possesses much better physical stats in general: Gaara relies solely on his sand to defend himself, and without it, it's unclear how strong Gaara is. Now, since is the New Era Gaara being used, he's had plenty of time to train, and according to Kinshiki, Gaara's taijutsu is on-par with Naruto and Sasuke, which is very impressive. Therefore, I don't think this battle is a stomp, but Katakuri would still win, perhaps with minor difficulty.
