The squirrel isn't really much help at this point and will immediately get killed by Sesshōmaru the moment it tries to attack him and Kars won't be able to sneak up on him since Sesshōmaru can pick up his scent.

Ultimate Kars vs Sesshōmaru

Kars could easily alter his scent.
The squirrel was a point to show that Kars could attack him keeping his distance, and the sneak up on Lisa-Lisa showing his careful nature.
Edit: Further emphasizing the distance thing, Kars can bombard Sess with feathers-transformed piranhas and/or tentacles and basically ANY type of animal, all likely having his physical stats (a fricking squirrel killed a group of nazis, lol).

Yes, he is extremely careful. But the moment he has the advantage, he becomes overconfident, as he could've easily kill Joseph after he cut off his arm, but instead chose to toy with him more.
All of which won't really do much because they'll immediately get killed right off the bat with just a slash of Bakusaiga since it can destroy a thousand demons in one slash and Bakusaiga can also destroy it's foes on a cellular level. Also, why are you assuming any animals he summons has his physical stats? Because if they're all as powerful as Kars himself, he wouldn't even need to chase down Joseph.

Also, Kars using a squirrel to attack for him is more likely him testing out his newfound powers rather than being careful.

Kara has complete bodily control, if he can alter DNA to create other species there is no reason why he couldn't alter his scent.

And why exactly wouldn't he test Sess out? Is certainly in his character, and once he sees the sword's capabilities, he would avoid being hit by it as much as possible.
