it wouldn't work like that if shadow decides it shouldn't. he wants the dude to be defeated so theres like infinite outcomes of being defeated

It may not necessarily mean it's an insta kill, but more like once he decided that the wants to defeat Zeno, fate (which spans across all space and time) predetermines that outcome. We don't know for sure how Zeno will be defeated, but we are sure that it will happen, somehow (fate can make the unlikely possible, as it is described as being able to grant wishes in the game). Whether a simple punch will defeat Zeno, or Shadow making Zeno feel extreme guilt for killing him (resulting in Zeno ending his own life) are two of the many possibilities that could lead to Zeno's defeat. It's just that the punch throw would be faster than the whole guilt process, for example. But an outcome chosen by fate out of the many possible ones becomes predetermined by fate to happen, having a 100% possibility to go through, and cannot be avoided no matter how much Zeno would try to prevent it from happening.

Soo fate hax restrict, but bloodlusted Main Plane? Still can be a thought-based Time Stop into other lethal haxes, then.

Incon sounds fine, since fate can either predetermine Shadow getting EE'd and Zeno taking his life after that, or it can predetermine Shadow throwing a punch that would kill Zeno all while preventing Zeno from EEing or doing anything to stop that punch from taking place. Or it can predetermine Shadow looking at Zeno a certain way which would cause Zeno to feel a certain way and thus finish himself off. Anything that would result in Zeno getting defeated. But it's all up to what fate decides will happen, so it is an inconsistent match result.

thats not something that shadow would want so he wouldn't get EE'd tho. all he wants is zeno to be defeated and thats gonna happen without him even realizing

It affects the timeline he is located in, but if he were to hop into an alternate timeline his fate hax would now work in that timeline instead. For example Marcus and his army are stated multiple times to have almost destroyed the Heralds and their Dome, but because they had been BFR'd by Bolo (the guy who is second to Shadow in world importance / fate hax potency, and who wanted the Dome to not get destroyed) and imprisoned into a time loop located somewhere in the Void, "between the dimensions", Marcus' fate hax stopped applying in the real world and instead was applying in the time loop dimension, but time loops constantly there so right as him and his army are about to reach the Dome and destroy it time automatically turns back and they are back to square one. Meanwhile the Heralds from the real world continue to live in peace for many more years to come, and when Marcus finally escapes the time loop and returns to the real world he simply doesn't want to destroy the Dome anymore since now he doesn't have an army to raid it with (because his army, unlike him, couldn't escape the loop).
If Zeno were to nuke the timeline Shadow would first of all die if he is caught in the radius of the attack. But fate should prevent Zeno from doing anything that would prevent it or Shadow from defeating Zeno.
